Ingredients:
- 1 cup instant or rolled oats with 1 cup oat flour (just blend rolled oats in blender or food processor until it becomes a fine flour)
- 2 extra ripe bananas
- ½ cup natural peanut or almond butter
Steps:
- Preheat oven to 350 degrees and line baking sheet with parchment paper
- Mash bananas in mixing bowl with fork
- Add oats, oat flour and nut butter to bowl and combine
- Spoon dough onto baking sheet, lightly flattening each cookie with the back of the spoon
- Bake for 15 minutes and let cool before eating
Tips:
- Mix in dark chocolate chunks, coconut flakes or raisins
- Store in fridge for up to 1 week
