Healthy Blueberry-Banana Muffins

Ingredients:
- 2 cups almond, coconut or buckwheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 3 large bananas (overripe)
- 1/4-1/3 cup coconut sugar
- 1/4 cup coconut oil
- 1/3 cup applesauce
- 1/2 cup almond milk
- 1 teaspoon vanilla
- 1 cup blueberries
Steps:
- Preheat oven to 350 degrees
- Mash bananas in a large bowl, mixing in coconut sugar, coconut oil, milk, vanilla, and applesauce
- In separate bowl, mix dry ingredients (flour, baking powder, baking soda, salt, and cinnamon)
- Mix dry ingredients into wet ingredients and add blueberries
- Pour batter into lined muffin pan
- Bake for 20-25 minutes, until golden brown
- Let cool for 10 minutes and enjoy!
Tips:
Want to spice it up? Add cacao nibs, coconut flakes, walnuts or pecans!
