Ingredients:

  • 3 eggs (organic if possible)
  • 1/2 tsp ground turmeric
  • 1/4 tsp black pepper
  • Salt to taste
  • 1/2 avocado
  • 1/4 cup shiitake mushrooms
  • 1/2 cup spinach
  • 1/4 cup tomatoes
  • 2 small tortillas wraps

Steps:

  1. Crack eggs into a small bowl and whisk them together with the turmeric, salt, and black pepper.
  2. Scramble the eggs over low to medium heat.
  3. When eggs are finished, remove them from the pan.
  4. Sautee the spinach and mushrooms on the pan until both are wilted and soft.
  5. Combine inside of a tortilla with sliced tomatoes and avocado.
