- 3 eggs (organic if possible)
- 1/2 tsp ground turmeric
- 1/4 tsp black pepper
- Salt to taste
- 1/2 avocado
- 1/4 cup shiitake mushrooms
- 1/2 cup spinach
- 1/4 cup tomatoes
- 2 small tortillas wraps
- Crack eggs into a small bowl and whisk them together with the turmeric, salt, and black pepper.
- Scramble the eggs over low to medium heat.
- When eggs are finished, remove them from the pan.
- Sautee the spinach and mushrooms on the pan until both are wilted and soft.
- Combine inside of a tortilla with sliced tomatoes and avocado.
