Buckwheat Banana Bread

Ingredients:
- 5 extra ripe bananas
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups buckwheat flour
- 1 tsp baking soda
- 1 tsp cinnamon
- Pinch of sea salt (1/8 tsp)
Steps:
- Preheat oven to 350 degrees F
- Lightly grease a 9x5 inch loaf pan with coconut or avocado oil (alternatively, line pan with parchment paper)
- In a mixing bowl, mash bananas using a fork
- Add egg and vanilla to bowl and stir
- In a separate bowl, mix buckwheat flour, baking soda, cinnamon and sea salt
- Stir the dry ingredients into the wet ingredients
- Pour mix into the loaf pan and bake for 50-60 minutes, until top is lightly browned
Tips:
- Mix dark chocolate chunks or walnuts into the batter
- Cut one banana in half (long way) and lay each half on top of the mixture before baking
- Enjoy bread toasted with peanut or almond butter
- Wrap loaf in plastic and store in the fridge for up to 1 week
- Replace egg with ¼ cup coconut yogurt for vegan recipe
