Carrot-Ginger Soup
Prep Time: 5 minutes Cook Time: 5-6 hours Servings: 5
Ingredients:
- 20 oz carrots (frozen is fine)
- 2 15oz cans diced tomatos
- 1-2 cups yellow onion, diced
- 1 tbsp minced fresh ginger
- 1/2 tbsp minced garlic
- 1 tbsp lemon juice
- 3 1/2 cups low-sodium vegetable broth
- 1/4 tsp salt
- 1/4 ground pepper
Steps:
Add all ingredients to a slow cooker, and cook on low for 5-6 hours. If using stove top, cook covered on low in large pot for 5-6 hours. Add to heat safe blender (or use immersion blender), and pulse until it becomes a puree. Serve warm or cold!
