Cashew Cream & Wild Rice Soup

Ingredients to Saute

  • 2 cups cremini mushrooms, sliced
  • 1/2 a large yellow onion, chopped
  • 3 cloves garlic, minced

Ingredients for Cashew Cream

  • 1/2 cup raw cashews (soaked in 1 cup water overnight)
  • 1 tbsp nutritional yeast
  • 2 tbsp miso paste
  • 1 tbsp apple cider vinegar

All Other Ingredients

  • 1 cup wild rice
  • 1 cup red or yellow potatos, chopped
  • 1 cup sweet potatoes, chopped
  • 2 cups kale, chopped
  • 3 cups low sodium vegetable broth
  • 2 tbsp italian seasoning


  1. Soak cashews in 1 cup of water overnight or during day (at least a few hours)
  2. Place a large pan over medium heat and add a few tablespoons of water OR 1-2 tablespoons coconut/other cooking oil. Add saute ingredients and saute until tcooked through.
  3. Bring to a boil, reduce heat to a simmer, cover and cook about 30 minutes or until the rice is soft. Add the rest of your ingredients into your pot (EXCEPT for cashew cream ingredients)
  4. While this simmers, add cashews (with the water) and cashew cream ingredients to blender and blend on high until smooth.
  5. Once rice is cooked, add cashew cream to pot, stir to combine, then cool and serve!
