Cauliflower Rice Fajita Bowl
Transform frozen cauliflower rice into a healthy fajita bowl in under 15 minutes!

Ingredients:
- 1 package frozen cauliflower rice
- 1 can black beans, rinsed and strained
- 1 Spanish onion
- 1 green bell pepper
- 1 tbsp olive oil
- 1 tbsp cumin
- Jalapeno rings
- Optional: salsa, lime, shredded chicken, avocado and fresh cilantro to serve
Steps:
- Warm olive oil on medium heat in a large pan
- Add chopped onion and pepper and cook for 3-4 minutes
- In another pan, heat frozen cauliflower rice as directed on package
- Add cumin, black beans and diced jalapeno rings to vegetable pan and cook for an additional 3-4 minutes until peppers are tender
- Once rice is warm, remove from heat and pour into a large bowl
- Pour in sauteed veggies and beans and mix into rice
- Time to serve! Spoon into bowls, top with salsa, lime, cilantro and avocado and enjoy!
Tips:
- Add hot sauce for extra heat
- Add cubed roasted sweet potatoes for more healthy carbohydrates, vitamins, minerals and flavor
