Cauliflower Rice Fajita Bowl

Transform frozen cauliflower rice into a healthy fajita bowl in under 15 minutes!

Ingredients:

  • 1 package frozen cauliflower rice
  • 1 can black beans, rinsed and strained
  • 1 Spanish onion
  • 1 green bell pepper
  • 1 tbsp olive oil
  • 1 tbsp cumin
  • Jalapeno rings
  • Optional: salsa, lime, shredded chicken, avocado and fresh cilantro to serve

Steps:

  1. Warm olive oil on medium heat in a large pan
  2. Add chopped onion and pepper and cook for 3-4 minutes
  3. In another pan, heat frozen cauliflower rice as directed on package
  4. Add cumin, black beans and diced jalapeno rings to vegetable pan and cook for an additional 3-4 minutes until peppers are tender
  5. Once rice is warm, remove from heat and pour into a large bowl
  6. Pour in sauteed veggies and beans and mix into rice
  7. Time to serve! Spoon into bowls, top with salsa, lime, cilantro and avocado and enjoy!

Tips:

  • Add hot sauce for extra heat
  • Add cubed roasted sweet potatoes for more healthy carbohydrates, vitamins, minerals and flavor
