Chicken Tortilla Soup

Ingredients:

  • 2 tablespoons olive oil
  • 2 Bell Peppers (color is your choice)
  • 1/2 Red Onion
  • 3 Garlic Cloves
  • 1/2 jalapeño
  • 1/2 zucchini
  • 1 can diced green chilis
  • 1 can crushed tomatoes
  • 1 can black beans
  • 1 cup frozen corn
  • 4 cups chicken broth
  • 2 cooked chicken breasts or leftover rotisserie chicken (my personal fav)
  • 1/4 cup chopped Cilantro
  • Squeeze of Lime
  • 2 teaspoons cumin
  • 2 teaspoons taco seasoning
  • Salt and pepper to taste

Steps:

  1. Chop your peppers, onion, garlic, jalapeno, and zuchinni
  2. Heat pan to medium heat with olive oil. Sauté your bell pepper, onion, jalapeño, garlic, and onion in olive oil on medium heat for about 5 minutes.
  3. Add in all remaining ingredients and bring to a boil. Lower heat to a simmer and let cook for 30 minutes to an hour.
    *Instant pot version: same steps in instant pot but cook for 12-15 minutes.
