Chicken Tortilla Soup

Ingredients:
- 2 tablespoons olive oil
- 2 Bell Peppers (color is your choice)
- 1/2 Red Onion
- 3 Garlic Cloves
- 1/2 jalapeño
- 1/2 zucchini
- 1 can diced green chilis
- 1 can crushed tomatoes
- 1 can black beans
- 1 cup frozen corn
- 4 cups chicken broth
- 2 cooked chicken breasts or leftover rotisserie chicken (my personal fav)
- 1/4 cup chopped Cilantro
- Squeeze of Lime
- 2 teaspoons cumin
- 2 teaspoons taco seasoning
- Salt and pepper to taste
Steps:
- Chop your peppers, onion, garlic, jalapeno, and zuchinni
- Heat pan to medium heat with olive oil. Sauté your bell pepper, onion, jalapeño, garlic, and onion in olive oil on medium heat for about 5 minutes.
- Add in all remaining ingredients and bring to a boil. Lower heat to a simmer and let cook for 30 minutes to an hour.
*Instant pot version: same steps in instant pot but cook for 12-15 minutes.
