Chocolate Zucchini Cake

Ingredients:
- 1 ¼ cup oat flour (or blend rolled oats in blender or food processor until it becomes a fine flour)
- ¼ cup unsweetened cocoa powder
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp sea salt
- ½ cup coconut sugar
- ½ tbsp avocado or coconut oil
- 1 tbsp vanilla extract
- 1 medium zucchini (1 cup peeled and grated)
- 3/4 cup plain yogurt
- ⅓ cup softened natural almond butter (or preferred nut butter)
Steps:
- Preheat oven to 350 degrees and grease 9x5 inch pan with coconut or avocado oil
- Combine dry ingredients in mixing bowl
- Stir in wet ingredients then pour into baking pan
- Bake for 35-40 minutes
- Let cool completely before eating
Tips:
- Mix in walnuts or dark chocolate chunks
- Top with shredded coconut
- Store in fridge for up to 1 week
- Replace plain yogurt with coconut yogurt for vegan recipe
