Key Lime Pie Bars

Ingredients:
Crust:
- 6 pitted dates
- ¾ cup cashews
- ½ cup oat or almond flour
- ¼ tsp pumpkin pie spice (can sub. cinnamon)
- 1 teaspoon vanilla extract
- ½ tsp sea salt
Filling:
- 1 1/4 cup whole cashews (soaked in water overnight)
- 1/4 cup canned coconut milk
- 1/3 cup lime juice
- 1 tablespoon lime zest
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons coconut oil
Steps:
- Add the crust ingredients to a food processor, and pulse until all ingredients are combined into a sticky dough.
- Press the dough into an 8×8 baking pan that is lined with parchment paper. Put crust into the fridge while you prepare the filling.
- Add the filling ingredients into a high powered blender (or food processor again) and blend until they combine into a creamy filling. Adjust lime or sweetener to taste if desired.
- Pour the filling into the pan over crust, even out, and freeze overnight or 4+ hours.
- Once frozen, cut, garnish with lime zest, and enjoy!
