Key Lime Pie Bars

Ingredients:

Crust:

  • 6 pitted dates
  • ¾ cup cashews
  • ½ cup oat or almond flour
  • ¼ tsp pumpkin pie spice (can sub. cinnamon)
  • 1 teaspoon vanilla extract
  • ½ tsp sea salt

Filling:

  • 1 1/4 cup whole cashews (soaked in water overnight)
  • 1/4 cup canned coconut milk
  • 1/3 cup lime juice
  • 1 tablespoon lime zest
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil

Steps:

  1. Add the crust ingredients to a food processor, and pulse until all ingredients are combined into a sticky dough.
  2. Press the dough into an 8×8 baking pan that is lined with parchment paper. Put crust into the fridge while you prepare the filling.
  3. Add the filling ingredients into a high powered blender (or food processor again) and blend until they combine into a creamy filling. Adjust lime or sweetener to taste if desired.
  4. Pour the filling into the pan over crust, even out, and freeze overnight or 4+ hours.
  5. Once frozen, cut, garnish with lime zest, and enjoy!
