Loaded Avocado Toast

Ingredients:
- 2 slices whole-grain or sourdough bread
- 1 small ripe avocado
- 1/4 tsp garlic powder
- Pinch of sea salt and pepper
- Pinch of crushed red pepper
- Juice of 1/2 lemon
- Sliced radishes, about 6 pieces
- 1 tbsp pepitas (optional)
- Small handful of arugula
Steps:
- Toast your slice of bread until golden and firm
- Remove the pit from your avocado. Use a big spoon to scoop out the flesh
- Put it in a bowl and mash it up with a fork until it’s as smooth as you like it
- Mix in a pinch of salt, garlic powder, and pepper
- Spread avocado on top of your toast
- Squeeze lemon juice on both pieces
- Add radish slices, pepitas, and arugula on top
Tips:
- To find a perfectly ripe avocado, look for ones that are dark green-black and ever so slightly soft to the touch.
- You can also swap out the sourdough bread for a sprouted grain bread, like Ezekiel!
