Protein-Packed Bean Salad

Ingredients:
- 1/2 - 1 cup beans of choice
- 4 large handfuls raw salad greens
- ½ avocado
- ¼ cup tomatoes (diced or halved cherry tomatoes)
- ¼ cup cucumbers (diced)
- 1 tbsp pumpkin or sunflower seeds
- 1 tbsp balsamic vinegar
- 2 squeezes lemon
- Optional: ¼ cup kalamata olives (chopped)
Steps:
Mix all ingredients in a bowl and mix with balsamic vinegar & lemon juice.
