Protein-Packed Bean Salad

Ingredients:

  • 1/2 - 1 cup beans of choice
  • 4 large handfuls raw salad greens
  • ½ avocado
  • ¼ cup tomatoes (diced or halved cherry tomatoes)
  • ¼ cup cucumbers (diced)
  • 1 tbsp pumpkin or sunflower seeds
  • 1 tbsp balsamic vinegar
  • 2 squeezes lemon
  • Optional: ¼ cup kalamata olives (chopped)

Steps:

Mix all ingredients in a bowl and mix with balsamic vinegar & lemon juice.
