Quick and Easy Veggie-Bean Medley

Ingredients:
- 1/2 onion
- 1/2 - 1 bell pepper
- 1/2 - 1 cup mushrooms
- 2-3 handfuls kale or spinach
- 2-4 garlic cloves
- 1 tbsp olive oil
- 1/2 - 1 cup beans of your choice (chickpeas, cannellini, black beans)
Steps:
- Sauté all veggies except your leafy greens in olive oil & garlic for 5-7 minutes
- Add the leafy greens and canned beans and cook for an additional 2-3 minutes
- Put in a bowl and enjoy
Tips:
- Add herbs/spices of choice! (red pepper flakes, basil, oregano)
- Feel free to swap out any veggies for your favorites
