Quick and Easy Veggie-Bean Medley



An easy warm salad filled with protein & flavor!

Ingredients:

  • 1/2 onion

  • 1/2 - 1 bell pepper

  • 1/2 - 1 cup mushrooms

  • 2-3 handfuls kale or spinach

  • 2-4 garlic cloves

  • 1 tbsp olive oil

  • 1/2 - 1 cup beans of your choice (chickpeas, cannellini, black beans)


Steps:

  1. Sauté all veggies except your leafy greens in olive oil & garlic for 5-7 minutes

  2. Add the leafy greens and canned beans and cook for an additional 2-3 minutes

  3. Put in a bowl and enjoy


Tips:

  • Add herbs/spices of choice! (red pepper flakes, basil, oregano)

  • Feel free to swap out any veggies for your favorites
