Salmon Burgers

Great source of… ✓ Healthy fats (omega 3's!) ✓ Protein

Ingredients:

  • 1 large salmon fillet
  • 1 tsp tarragon
  • 2 tsp dill
  • 1 small cucumber (preferably a Persian cucumber)
  • 1 lime
  • 1 tbsp olive oil

Steps:

  1. Remove skin from salmon and finely chop fillet
  2. Dice cucumber and add half to mixing bowl
  3. Drizzle olive oil on cucumber and add lime juice, salt and pepper
  4. Add other half of cucumber to mixing bowl with salmon, tarragon, dill, salt and pepper
  5. Form small patties with salmon mixture and cook on medium-high heat in lightly oiled pan
  6. Serve with cucumber salad

Tips:

  • For a salmon burger sandwich, serve in toasted whole wheat pita bread
  • Add diced jalapeno to salmon mixture for heat
