Savory Vegan Breakfast Bowl

Ingredients:
- 1/2 block firm tofu, crumbled
- 1 tsp turmeric
- Splash soy sauce
- 1 tsp olive oil (or water)
- 1-2 big handfuls of kale, de-stemmed and chopped
- 1/2 - 1 cup sliced mushrooms
- 1/2 - 1/2 cup diced white onions
- 1/2 avocado
- Salsa
- 1/2 cup cooked brown rice
- salt and pepper
Steps:
- Mix tofu, turmeric, soy sauce, pepper and water in bowl
- Heat skillet over medium-high heat and add splash of water or 1/2 tsp olive oil
- Add kale, mushrooms, and onions
- Cook vegetables for 5-8 minutes, until tender
- Remove veggies from pan, placing in bowl
- Add tofu mixture to pan and cook for 5 minutes
- Top vegetable bowl with tofu scramble along with brown rice, avocado, and salsa
- Enjoy!
