- 1 box banza or other bean-based pasta
- 1 ½ cups soaked cashews
- 3 tbsp lemon juice
- ¾ cup water
- 1 ½ tsp salt
- ¼ cup nutritional yeast
- ½ tsp chili
- ½ garlic clove
- ¼ tsp turmeric
- ½ tsp mustard
Optional additions: swiss chard, broccoli, tomatoes, spinach
- Boil water in a large pot, reduce heat to a low boil, and cook pasta for 4-5 minutes.
- Blend vegan cheese ingredients.
- Pour cheese sauce over drained pasta and mix thoroughly over low heat and serve.
