Vegan Mac and Cheese

Ingredients:

Pasta

  • 1 box banza or other bean-based pasta

Vegan cheese

  • 1 ½ cups soaked cashews
  • 3 tbsp lemon juice
  • ¾ cup water
  • 1 ½ tsp salt
  • ¼ cup nutritional yeast
  • ½ tsp chili
  • ½ garlic clove
  • ¼ tsp turmeric
  • ½ tsp mustard

Optional additions: swiss chard, broccoli, tomatoes, spinach

Steps:

  1. Boil water in a large pot, reduce heat to a low boil, and cook pasta for 4-5 minutes.
  2. Blend vegan cheese ingredients.
  3. Pour cheese sauce over drained pasta and mix thoroughly over low heat and serve.
