Veggie Bean Chili

Ingredients:

  • 3-4 garlic cloves

  • 1 diced yellow onion

  • 2 diced green bell peppers

  • 3 diced celery stalks

  • 3 sliced carrots

  • 1 tbsp cumin

  • 1/2 tbsp onion powder

  • 1/2 tbsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp cayenne pepper

  • 1 can strained kidney beans

  • 1 can strained pinto beans

  • 1 can crushed tomatoes

  • Salt and pepper


Steps:

  1. Add veggies and 1/3 cup water to large pot and cook until water evaporates

  2. Add another 1/4 cup water and garlic + spices to pot and sauté for a few minutes

  3. Add beans, tomatoes and 1 cup of water

  4. Bring everything to a boil over high heat, then reduce the heat to a simmer, cover, and cook for 10 minutes

  5. Remove the lid from the pot and cook uncovered for 5-7 additional minutes

  6. Serve and enjoy!


Tips:

  • Want more flavor? Top with avocado or nutritional yeast!
